Soups and salads are easy meals for the Summer months. Lisa will show you how to make superior salads that are packed with nutrients with delicious dressings that have zero cholesterol. Lisa will demonstrate how to make her Tangerine Dream, Rockin' Ranch and Sun-Dried Tomato Dressings.

Participants will also learn how to make Verry Veggie Soup, Lemon Orzo Soup and Kale, White Bean and Yam soup. Homemade bread will also be served along with a seasonal Berry Cobbler for dessert. A $10 food fee is payable to the Instructor.

VEGETARIAN COOKING
FOR NON-VEGETARIANS

Instructor: Lisa Williams, MS, CTRS

You can make delicious and nutritious vegetarian treats that are really fun and not labor intensive. Learn how to make Chili, Sweet Potato Cornbread, and Minestrone Soup. You will also sample an array of meat substitutes. Plant-based foods can be incorporated into your diet without even knowing it and with simple planning. Lisa will explain the benefits of vegetables and soy products as she shows you how to make some great tasting recipes that can add vitamins, protein, and fiber to your diet and are completely free of cholesterol. You'll also enjoy zero cholesterol lemon bars for dessert.

This class will offer participants a lot of tasting and interaction. Entree-sized portions will be served so you can skip dinner on the night of the class. A $9 food fee is payable to the instructor at the class.

GLOBAL VEGETARIAN COOKING

Instructor: Lisa Williams, MS, CTRS

If you are interested in learning how to make some classic international and ethnic dishes with a new twist, then this class is for you.

Instructor Lisa Williams will teach you how to prepare some global favorites which are low in fat with zero cholesterol but still full of flavor, fiber, nutrients and protein. You won't miss the meat or dairy as she teaches you how to make a Greek-Style Moussaka (substituting lentils for lamb), Provencal Vegetable Quiche (using tofu instead of eggs and cream), and Turkish-Style Stuffed Eggplant with Walnut Sauce. Lisa will also serve an organic salad with her Asian inspired Tangerine Ginger dressing and a delicious dairy-free chocolate mousse for dessert.

Entree sized portions will be served so you can skip dinner (and you won't have to feel guilty about having a second helping). A $11 food fee is payable to the Instructor.

SUPERIOR SAUCES

The right sauce can make the meal! Learn to make the following 5 sauces that have zero cholesterol and major flavors: Roasted Red Pepper Sauce (delicious on greens, grains or poultry), Quick Romesco Sauce (great on bread, potatoes, veggies, burgers or sandwiches), Chunky Mushroom Ragu (great on pasta, eggs, tofu, greens or meat), Tempeh Bolognese (delicious on pasta, polenta, potatoes or veggies) and a Balsamic Port Sauce with Dried Cherries and Rosemary (great on sausage, sweet potatoes, quinoa or couscous).

Participants also learn to make an easy strawberry citrus sauce (delicious on cakes, fruit or ice cream) and will sample each sauce with a variety of different items. A $9 food fee is payable to the Instructor.

GOURMET VEGETARIAN COOKING

Here's your chance to learn how to make restaurant quality vegetarian dishes for your home without the restaurant price! Lisa will take you step by step on how to prepare a nutritious gourmet plant-based meal that meets low fat, high protein, and no cholesterol diets. Lisa will demonstrate how to make The Asian Napoleon (seared vegetables in sesame sauce layered between crisp sweet and spicy sesame-phyllo wafers over jasmine rice atop a Kaffir lime and coconut sauce). This is a new dish which is extremely delicious and can be adjusted to meet just about anyone's taste. Participants will also enjoy Mango-Coconut Tapioca for dessert.
